Items:
1- medium fresh pineapple
4-5 Oz. of cream cheese
2-3 Tbsp. of brown sugar
3 Tbsp of melted butter
white sugar and cinnamon
12 uncooked tortillas-whatever size you want
Preheat your oven to 375. Core and slice your pineapple into chunks and add to your food processor. Then add cream cheese and the brown sugar to taste. Dependent upon your pinapple, you can add more or less brown sugar- so start smaller and add more as you see fit.
Pulsate this mixture until it's a thick, soup like consistency.
You then pull out a baking sheet, and butter, sugar and cinnamon both sides of two of the tortillas.
Put about three Tbsp. of the pineapple mixture on half of each tortilla that are on the baking sheet and then fold them over.
Bake for about 5 min. and then flip them and bake for another five minutes.
They should be warm, brown and have pockets of air.
This recipe if you cut each pine-adilla into three makes about 30- unless your significant other gets to them first!!
