You will need:
1 box of pasta- I used Rotini in the whole wheat variety and it worked great
1 Quart of half and half
3 bags of 2 cups of chesse- or 6 cups of cheese
2 Tbsp of butter
2 Tbsp of white flour
1/2 a large onion-diced
2 heads of garlic- grated
1 medium butternut squash-prebaked and chopped into bite sized pieces
Ok- First I did the pasta to the box directions. And actually I did it for about two minutes less, leaving it al-dente so when mixed into the sauce it didn't get to soggy, but this is up to you.
While pasta is boiling- heat a medium sauce pan with olive oil and saute the onion until translucent. Then add in garlic just for a minute, but watch to make sure it doesn't burn. When both are cooked add in butter nut squash and just heat until warm- and then turn down until the rest of the mac and cheese is ready.
I then dumped the pasta in a strainer and used the pasta pot for my sauce. I started by melting the butter and adding the flour, making a roux. I cooked the roux for about 30 sec. and then added the whole carton of half and half. I let this come up to a boil but stirring constantly. When the mixture had somewhat thickened I added all the cheese and stirred together, while taking it off the heat. I then added the pasta and the veggies and folded it all together.
